Sorry about that, Lisa…I think I might have to add some time to the recipe. Mine were also a little soft but I just thought that my microwave wasn’t very powerful. I continued to microwave another 5 minutes or so and it did the trick. You shouldn’t have to refrigerate them, but I happen to like them cold (even out of the freezer, but that can play havoc on your back molars!).

Really… very tasty! But quite soft even after several hours. I think I will try to freeze a bit before I attempt a cleaner cut to portion and wrap caramels for gifting.
