Martha, these are pretty sturdy cookies and should keep about 4-5 days. Any longer and they should be refrigerated. They can also be frozen but they won’t have that bit of crunch when they are defrosted. Still delicious, however!

I did mess up when measuring the flour. I thought I was using a 1-cup measuring scoop but it was actually a 3/4c scoop… So I was 1/4c short flour in recipe but they still were awesome!! Making again tonight. Properly.
Altho I’m wondering if I can double this recipe or if it’s best to just make 2 batches?
