In the the mid 80’s my parents had bought a condo in the Sand Dollar Condo complex in Clearwater, and I spent a ton of time down there eating Coconut shrimp along the the Gulf Coast up and down. There was a Bar that cooked great Coconut Shrimp, that I would always stop into and eat Coconut Shrimp to my Hearts content. Always huge, bountiful & tasted so good that I would overdose on them at times. They tasted great with a cold beer too. But the best part that I can remember is, the chewey Coconut taste of the Shrimp. You know I’m definitely making this recipe. Cheers Fran.
