Glad you liked the tip, Ellen! I also find that air-drying them on parchment and then cooking them on a foil-lined baking sheet that tis then covered in parchment produces the crunchiest exterior with a nice fluffy interior. It seems like an extra step, but I don’t mind, based on the results!
