I am so sorry that I didn’t get to this comment more quickly…you probably needed that answer. Let me know how you handled it but I didn’t have a problem with getting a crisp skin. The skin softens a bit as it’s staying warm but it’s still delicious!

I do my Turkey exactly the same but put a good quality butter under the breast skin, cover with streaky bacon, water in tray & upside down! Everyone comments on how delicious & moist it is!
