I only had 1/2 cup of granulated sugar so I used coconut sugar for the other 1/2 cup. This recipe doesn’t need any more adjustments- it’s perfect as it is but if you want to make it somewhat fancier, just top a slice with plain yogurt and mixed berries.

It was amazing it was in the oven for 60 minutes nice crunch on the top beautifully moist not overly dense. I wish I could post a picture of it. I just used the vanilla extract. It goes beautifully with my cappuccino in the morning!

Yes, I agree that the yolks are rich. When I make a meringue and end up with a lot of extra egg yolks, I’m always searching for what to do with them. This was an option I came up with and it’s delicious!
