I only had 1/2 cup of granulated sugar so I used coconut sugar for the other 1/2 cup. This recipe doesn’t need any more adjustments- it’s perfect as it is but if you want to make it somewhat fancier, just top a slice with plain yogurt and mixed berries.

Great question, Beth! I had to think about this and go look at my pans because you are correct that the photos look like regular size muffin pans. In actuality, they are mini muffin pans! So, yes, stick with the minis. Otherwise, they are too large for one-bite appetizers. By the way, these are always a hit every time I serve them!

But in the two photos above, it looks like a regular-sized muffin pan, holding 12. Can you clarify? Thanks!

I haven’t tried microwaving it, Donna, but with I would imagine it would be fine. If it feels a bit dry, maybe add a touch of water to the rice to steam it when its microwaved. That should help it stay fluffy.
