Welcome the New Year with Champagne Jello Shots! These easy-to-make confections take jello shots to a whole new level!
Sparkly little things…get your New Year’s Eve started on the right bite!
Simply combine champagne, sugar and lemon juice in a pan and stir, while heating, until the sugar dissolves.
Add the gelatin and whisk. Stir in the vodka and continue to whisk.
Pour into a pan and refrigerate for at least 3 hours to set.
Add some gold sprinkles to the top (gotta have gold sprinkles) and slice into squares. Happy New Year!

Ingredients
- 3 cups champagne (or sparkling wine)
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 4 tbsp (4 envelopes) unflavored gelatin
- 1 cup vodka
- sprinkles, optional
Instructions
Line an 8 x 8 pan with plastic wrap on all sides. Set aside.
Combine the champagne, sugar, and lemon in a heavy bottom sauce pan over medium-low heat. Stirring with a whisk, cook until the sugar granules have completely dissolved.
Add the gelatin and whisk. Add in vodka and whisk to combine. Do not let the mixture boil.
Pour the mixture into your prepared pan and place in the fridge for at least 3 hours to set.
If desired, top with sprinkles before slicing into 16 squares and serving!
Chef’s Notes:
If you would rather make these jello shots in individual containers, you can also use mini condiment containers or shot glasses!
