Strawberry Thyme Lillet Spritzer

Strawberry Thyme Lillet Spritzer is one of those cocktails that feels a little fancy without requiring any special bartending skills. I just love how the fresh strawberries and thyme add a summery twist to the light, citrusy Lillet Blanc, while the Prosecco gives it just the right amount of sparkle.

Whether you’re hosting brunch, relaxing on the patio, or gathering friends for happy hour, this refreshing cocktail comes together in just minutes. It’s simple, beautiful, and one of my favorite ways to toast a warm summer evening.

Start by dividing the chilled Lillet Blanc between two glasses. Add a squeeze of fresh lemon juice, then drop in the sliced strawberries and fresh thyme. As the drink sits, the fruit and herbs gently infuse the cocktail with fresh summer flavor.

Next, fill each glass with crushed ice before topping it with chilled Prosecco or Champagne. The bubbles bring everything together, creating a light, refreshing cocktail that’s perfect for sipping on a warm afternoon.

Give each spritzer a gentle stir and garnish with an extra strawberry or a sprig of thyme if you’d like. It’s an easy cocktail that looks just as beautiful as it tastes.

Cheers!

  • About 2/3 cup crushed ice

Chef’s Notes:

  • Lillet Blanc is a light, citrusy French aperitif that pairs beautifully with fresh berries and herbs.
  • For a lighter cocktail, substitute sparkling grape juice or sparkling water for the Prosecco.
  • Garnish each glass with an extra strawberry slice, a sprig of thyme, or a lemon wheel for an elegant presentation.
  • Serve well chilled for the most refreshing flavor.
