Easy Blueberry Sauce

Easy Blueberry Sauce is one of those little recipes that can make a simple dessert feel pretty special. Fresh or frozen blueberries simmer with lemon, sugar, and a touch of vanilla until you have a glossy sauce with plenty of whole berries tucked throughout. It’s sweet, bright, and takes hardly any effort.

Keep it in the refrigerator and you’ll find all kinds of ways to use it. Spoon it over pancakes, waffles, cheesecake, ice cream, pound cake, or even yogurt. I especially like that it isn’t completely smooth, so you get those juicy little blueberries in every bite.

Add the blueberries, sugar, lemon juice, lemon zest, and salt to a saucepan and let everything simmer together. As the berries soften, gently crush about a third of them with the back of a spoon or a potato masher. Leave the rest whole. That’s what gives the sauce its lovely texture instead of turning it into a smooth purée.

Whisk the cornstarch with water to make a quick slurry, then stir it into the berries. It will thicken the sauce just enough to make it glossy and spoonable without making it too heavy.

Take the sauce off the heat and stir in the vanilla. Let it cool for a few minutes before serving. It’s really that easy!

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp cornstarch
  • 1 tbsp water
  • Pinch of kosher salt
  • 1/2 tsp vanilla extract

Instructions

Add blueberries, sugar, lemon juice, lemon zest and salt to a small saucepan over medium heat.

Simmer for 5–7 minutes. As they soften, use the back of a spoon or a potato masher to gently crush about 1/3 of the berries.

Leave the remaining berries whole. That gives you a sauce that’s glossy and spoonable with some beautiful whole blueberries throughout, rather than a completely smooth purée.

Whisk cornstarch and water together until smooth. Stir into blueberries and cook 1–2 minutes, until slightly thickened. Remove from heat and stir in vanilla. Let cool for a few minutes before serving.
