20-Minute Potstickers in Garlic Broth is an easy and quick way to satisfy your Asian food cravings.  Frozen potstickers meet a garlicky, gingery spicy broth and are topped with fresh herbs to create a delicious and belly-warming soup.  Maybe it’s a main course.  Maybe it’s a side…hmmmm.

When my kids were little, I used to make frozen chicken potstickers from Costco frequently for them.  Dipping the potstickers into that yummy soy-based sauce was exactly what we all loved.  This is reminiscent except I would say that Trader Joe’s has better frozen potstickers, imho, and the potstickers swim in this lovely broth.  Give it a try for an easy meal!

Begin by sautéing the butter, sesame oil, scallions, red curry paste, garlic, ginger and chili flakes until the oil is sizzling and the spices are fragrant.

Lower the heat and add the peanuts, sesame seeds, and soy sauce.  Follow that by adding the broth, basil and cilantro.  Simmer for a few minutes.

Cook the potstickers according to the package directions, drain and then toss them with the broth.

Serve with fresh basil and scallions.  Enjoy!

Ingredients

  • 2 tbsp unsalted butter
  • 1/3 cup sesame or peanut oil
  • 1/3 cup chopped scallions
  • 1-3 tbsp Thai red curry paste
  • 6 cloves garlic, chopped
  • 1 tbsp grated ginger
  • chili flakes
  • 1/4 cup chopped peanuts
  • 2 tbsp toasted sesame seeds
  • 1/3 cup soy sauce or tamari
  • 1-2 cups broth, whatever flavor you prefer
  • 1/2 cup chopped fresh Thai or regular basil
  • 1/4 cup chopped fresh cilantro
  • 1 bag frozen potstickers/dumplings (chicken, pork, or vegetable)

Instructions

In a skillet, cook the butter, sesame oil, scallions, Thai red curry paste, garlic, ginger, and chili flakes over medium heat until very fragrant and the oil is sizzling, 5 minutes.

Reduce the heat to low. Mix in the peanuts, sesame seeds, and soy sauce. Stir in 1-2 cups broth. Add the basil and cilantro. Simmer for 2-3 minutes.

Cook the potstickers according to package directions, then drain. Toss the potstickers in the hot broth.

Serve with fresh basil and scallions.
