This Frozen Aperol Peach Margarita is the perfect drink to quench your summer thirst! It’s slushy, sweet and very delicious!
Combining peaches with silver Tequila, orange liqueur, lime and Aperol will give you a unique twist to a traditional margarita. Rim the cup with spicy Tajin, fill it up, and serve it with a peach popsicle on the top and people will be coming back for more (and more and more).
Some of you may know Aperol from the famous Aperol Spritz and you know it has a wonderful sweetness, with hints of orange, and vanilla. This is such a delicious combination with the peaches.
Make the whole recipe and serve it up in a pitcher or divide the quantities to make margaritas for a smaller group. Either way, this recipe is a keeper!

Frozen Aperol Peach Margaritas
Makes: 8 servings

Total Time: 5 minutes (plus more for popsicles)
Ingredients
Margaritas:
- Tajin, for the rim
- 1 & 1/2 cups silver tequila
- 1 cup Aperol
- 3/4 cup Cointreau (orange liquor)
- 1 cup fresh lime juice
- 4 cups frozen peaches
- 1/4-1/2 cup honey, use more or less to your taste
- 3-4 cups ice
- 3/4 cup coconut milk
Peach Popsicles:
- 6 cups peaches, chopped (thawed, if frozen)
- 1/2 cup mango, pineapple or orange juice
Instructions
Margarita:
Rim each glass with Tajin.
In a blender, combine the tequila, Aperol, orange liquor, lime juice, peaches, and honey. Add the ice and blend until slushy. Add the coconut milk and pulse to swirl it through the drink. Pour into your prepared glasses. Add popsicles and/or mint (if desired).
Peach Popsicles:
In a blender, combine 6 cups chopped peaches with 1/2 cup mango, pineapple, or orange juice. Puree until smooth. Divide the mixture among 6 popsicle molds or Dixie Cups. Freeze.
