Creamy Whipped Feta Dip

I love a quick appetizer and if 10 minutes sounds about right, then this Creamy Whipped Feta Dip is perfect for you!
All this requires is a food processor so that you can whip up all the ingredients. Then you simply decide if you’re serving it with pita chips, crudités, roasted veggies or just a spoon. That’s all there is to this!
My friend, Yvette, is a wonderful cook and especially when it comes to Middle Eastern/Lebanese food. When she sends me recipes to try, I usually pay attention because they are all delicious! This feta dip is no exception.
I served it with a platter of grilled vegetables and used whatever veggies look amazing that day at the market.
The combination of creamy feta cheese, Greek yogurt, lemon juice, Aleppo pepper and mint along with the crunchiness of the toasted pine nuts and pistachio nuts was a match made in heaven for these grilled vegetables.
Toasted pita, fresh vegetables or simply slathered on a piece of grilled chicken would be wonderful ways to serve this dip as well!

Creamy Whipped Feta Dip
Makes: 6 servings

Total Time: 10 minutes
Ingredients
- 8 ounces block quality feta, drained
- 3/4 cup Greek yogurt
- 1 lemon, zested
- 2 tbsp extra virgin olive oil, more as needed
- 1 tsp Aleppo pepper, or red pepper flakes (to your taste)
- 2 tbsp chopped fresh mint
- 2 tbsp chopped fresh parsley
- 2-3 tablespoons toasted pine nuts, optional
- 1-2 tablespoons crushed pistachios, optional
Instructions
In the bowl of a large food processor fitted with a blade, combine the feta, Greek yogurt and lemon zest. Blend, and while the processor is running, drizzle olive oil through the top opening, until the feta is whipped to a smooth mixture.
Transfer the whipped feta to a serving plate. With the back of your spoon, smooth the top of the feta, making an indentation in the middle (or a “well”). Pour a bit of olive oil all over the feta, then top with the Aleppo pepper, fresh herbs, and nuts.
Serve with pita chips, pita wedges, crudités or grilled vegetables.
