This Cucumber Salad with Red Onions and Dill has the crunch, zip and flavor to make shaved cucumbers interesting.
Riffing on dill pickles, we’ve added pickled red onions that are brined in a rice vinegar and whole-grain Dijon mustard and sweetened with a touch of honey. This brine becomes the dressing for the cucumbers after only 30 minutes of brining.

To pickle the red onions, simply combine the vinegar, mustard, honey, salt and pepper in a jar and shake well to mix. Add thinly sliced red onions, shake it up so that the onions are coated with the dressing and let it sit for 30 minutes.
Slice the cucumbers using a vegetable peeler into long strips. I didn’t use the first or last strip that was mostly the peel.
Stir together the cucumber and dill in a bowl.
Toss the salad with the red onion brine/marinade and add the onions right before serving.

Ingredients
- 1/8 cup rice vinegar
- 1 tbsp whole-grain Dijon mustard
- 1 tbsp honey
- Sea salt and freshly ground black pepper
- 1/2 red onion, thinly sliced
- 1 English cucumber, cut into lengthwise slices with a vegetable peeler
- 1 tbsp chopped dill
Instructions
Add vinegar, Dijon mustard, honey, salt, and pepper to a jar with a lid and shake well to mix. Add onion; let pickle for 30 minutes. Onions can be pickled up to 24 hours in advance. Refrigerate if not using right away.
Stir together cucumber and dill in a bowl; drain excess water. Toss salad with dressing and onions just before serving.
