Easter Nest Cupcakes

Pretty, tasty and perfect for Easter, these Easter Nest Cupcakes are a must!  Rich dark chocolate cupcakes piped with chocolate and vanilla buttercream to look like nests and topped with mini chocolate eggs are just what the doctor ordered for Easter!

Add a whimsical touch to any springtime holiday and invite the little ones to help decorate these pretty treats!

These cupcakes are made in one bowl (no mixer involved)!  Combine all of the dry ingredients.  Then, add the egg, sour cream, oil and vanilla.  Mix well and pour in boiling water until the batter is smooth.

Divide the batter between the muffin cups and bake for about 15 minutes.  Take them out of the oven and let them cool completely.

You’ll need to make two different frostings to decorate the cupcakes:  a chocolate buttercream and a vanilla frosting.

To make the chocolate buttercream, beat the butter along with the powdered sugar, vanilla, heavy cream and cocoa powder until it’s light and fluffy.  Transfer the buttercream to a piping bag with a small round tip.

To make the vanilla frosting, mix the powdered sugar with the butter, vanilla and heavy cream.  Beat until it’s fluffy and then transfer to a piping bag with a grass tip.

To decorate the cupcakes, begin with the vanilla frosting and cover the top of the cupcake with grass patches.  Once fully covered, pipe strands of chocolate buttercream to look like a nest.

Add a few chocolate eggs to the top of each cupcake.

Easter Nest Cupcakes

Ingredients

Chocolate Cupcakes:

  • 1 cup sugar
  • 3/4 cup plus 2 tbsp all-purpose flour
  • 1/4 cup plus 2 tbsp cocoa powder
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg, room temperature
  • 1/2 cup sour cream, room temperature
  • 1/4 cup canola oil
  • 1 tbsp vanilla extract
  • 1/2 cup boiling water

Chocolate Buttercream:

  • 1/2 cup unsalted butter, room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp heavy cream
  • 1/4 cup cocoa powder

Vanilla Frosting:

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp heavy cream

 

  • 48 pieces mini candy coated chocolate eggs

Instructions

To prepare cupcakes, preheat oven to 350F. Grease muffin tin or line with muffin liners.

In a large bowl, mix together sugar, flour, cocoa powder, baking powder, baking soda and salt.

Crack in the egg, spoon in the sour cream, and pour in the oil and the vanilla. Mix with a wooden spoon until just combined.

Pour in the boiling water, and slowly mix until smooth and fluid.

Divide batter evenly among prepared muffin cups, about halfway full. Transfer muffin tin to oven and bake for 15 to 18 minutes. Transfer muffin tin to a wire rack and let cupcakes cool completely.

To prepare chocolate buttercream, beat butter for a few minutes in a standing mixer with the paddle attachment on medium speed. Add powdered sugar and turn the mixer on low, beat until the sugar incorporates with the butter. Add vanilla, heavy cream and cocoa powder, beat on medium speed for another 3 minutes, or until buttercream becomes light and fluffy. Transfer buttercream to a piping bag with a very tiny round tip.

To prepare vanilla buttercream, place butter and powdered sugar in a mixing bowl. Beat until pale and fluffy, about 5 minutes. Transfer frosting to another piping bag with a grass tip or hair tip.

To assemble, start piping the vanilla frosting on the top of the cupcake. Squeeze the bag, pull up and away when frosting strand is long enough, stop pressure and pull tip away.

Once the top is covered with vanilla frosting, pipe chocolate buttercream on top in a round and wide circle in the middle of the cupcake. Keep piping rounds to make it look like a nest. Place 3 to 4 candy eggs in the middle.

Cupcakes can be stored at room temperature for 3-4 days.
