Lavender Blueberry Vodka Sparkler

While scouring through different Instagram pages, I came across this magnificent looking summer cocktail.  I adapted the recipe because we are a vodka household, not gin (even though a crisp Gin & Tonic seems appropriate at times!).  Feel free to substitute in the gin, if you are of that persuasion!

Let me tell you a little about Lavender…I have been seeing a whole bunch of recipes using lavender and I wondered what the appeal was.  So I purchased some lavender and made this simple syrup and I have to tell you that I really like it!!  First, let me give you a tip:  be sure to get culinary lavender.  Second, a little goes a very long way!  Be careful not to overdo it or it will taste like you are eating perfume!

Having said that, there are so many interesting recipes to try.  Coming soon, I will have a coffee drink that is infused with lavender.  I may also try a no-churn ice cream.  Why?  “Why not?” is more the question!!

Lavender Blueberry Vodka Sparkler

Makes: one cocktail

Prep Time: 23 minutes

Cook Time: 3 minutes

Total Time: 38 minutes

Ingredients

Lavender Simple Syrup:

  • 1 tbsp dried lavender
  • 1 cup boiling water
  • 1 cup sugar

Lavender Blueberry Vodka Sparkler:

  • 1 & 1/2 ounce Vodka
  • 1 & 1/2 ounce Lavender simple syrup
  • 2 ounces blueberry juice
  • Squeeze of lemon juice
  • Soda water, for topping

Instructions

Lavender Simple Syrup:

Steep the dried lavender in one cup of boiling water for 15 minutes. 

After 15 minutes, strain the dried lavender out and place the steeped water in the small sauce pan.  Add in sugar, then bring to a boil over medium-high heat.  Allow to boil for 3 minutes. 

Remove from heat and allow to cool completely before using.

Lavender Blueberry Vodka Sparkler:

In a 16-ounce highball glass filled with ice, add vodka, lavender simple syrup, blueberry juice, and a squeeze of lemon juice.  Stir to combine, then top with soda water.  Mix thoroughly before enjoying!
