Masters’ Peach Azalea Cocktail

You don’t have to be a fan of the Masters Golf Tournament to enjoy this spunky cocktail! Peaches provide the color and flavor behind this tantalizing drink that’s imbued with lime and pineapple juice and vodka. Need I say more??
I get that it’s a little early for peach season, so feel free to use frozen peaches to make the simple syrup.
Make the peach simple syrup by bringing to a boil sugar, water and peaches, breaking up the peaches as it simmers.
Once cool, strain the syrup and extract as much syrup as possible by pushing on the peaches as you strain them.
Fill a shaker with ice and add all of the ingredients. Shake until cold, approximately 20 seconds, and then pour into glasses with ice.

Masters’ Peach Azalea Cocktail
Makes: 2 cocktails
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Ingredients
Peach Simple Syrup:
- 3 medium peaches (about 8 – 10 ounces) washed, pitted and quartered
- 1 cup plus 2 tbsp granulated sugar
- 1/2 cup water
Cocktail:
- 2 ounces lime juice
- 2 ounces pineapple juice
- 1 ounce peach simple syrup
- 5 ounces vodka
- Dash of Grenadine syrup for pink color
Instructions
Peach Simple Syrup:
Combine the peaches, sugar and water in a medium sauce pot. Set the mixture over medium-high heat, stirring occasionally. Bring mixture to boil and reduce heat to simmer for 3 – 5 minutes. While simmering, use a wooden spoon to break up the peaches a bit. Remove from heat and set aside to cool.
Once syrup has cooled enough to be handled, strain the syrup through a fine mesh strainer lined with cheesecloth. Squeeze the peaches through the cheesecloth to extract as much syrup as possible.
Peach Syrup can be used immediately or store in an airtight container in the fridge or freezer.
Fill a shaker with ice and add all of the ingredients. Shake until cold, approximately 20 seconds and then pour into glasses with ice.
Garnish with mint leaves and serve.
