Not for Sissies Aperol Spritz

Not for Sissies Aperol Spritz is what I’m drinking this summer!  I say it’s not for sissies because we’re bagging the Prosecco and adding vodka.  Yayyy.  It’s simply a vodka soda with a splash of Aperol.  Maybe more than a splash of Aperol.  No judgement.

I know that an Aperol Spritz is a lovely summer drink, especially in Italy or other parts of Europe.  But….the Prosecco makes it a bit too sweet for me.

I love most kinds of clear alcohol (vodka, tequila or gin) mixed with a little soda and a piece of citrus.  I also love Aperol, with it’s slightly bitter, orangey flavor.

So, here’s what I do…I get rid of the Prosecco (less calories. Ha!), add a shot of vodka to the Aperol to make it a real drink (why drink if you’re you can’t feel it?  Double Ha!) and voilá!  I’m a happy girl!

Place ice in a wine glass, add Aperol and vodka and top it off with club soda.  Garnish the cocktail with a grapefruit or orange slice and enjoy a little bit of Italian summer with a zing!
