Mom’s Apple Crisp

When apple season hits, I always find myself baking Mom’s Apple Crisp because, well, it’s amazing!  It’s so easy and so tasty…my mouth is watering just thinking about it!

If you’ve followed me for a while, you know that my mom and dad were my original cooking/baking mentors as well as entertainers.  They were the best.  Sadly, they are both gone now, but they were always my inspiration.  Not only were they great cooks and entertainers, they were very funny people.  My dad’s sense of humor could be considered “potty” humor (the most slap-stick, silliest stuff cracked him up) and my mom just had the best laugh.  I digress as I share the photo below, when we were just 4 siblings (now up to 5) and very young.  Who or what my mother was cracking up at is unknown (most likely my father was doing something silly while taking the pic), but this is one of my faves.  In case you’re wondering, I’m the one in the middle with the flying nun collar on my dress!

I don’t know why I haven’t shared this recipe previously.  It’s a staple in our family.  It’s typically one of the dessert choices for any Autumn occasion.  Usually my sister Robyn makes it.  She’s the best at it!  But, with my daughter and her vegan boyfriend visiting this past weekend, I decided to make a vegan version of it (that’s what’s pictured) and I’m here to tell you that it’s every bit as good as the original.  The recipe isn’t vegan but to adjust it, just use a good non-dairy butter such as Miyoko’s.

Slice the apples and place them in a baking dish.  Add water, cinnamon, lemon juice and lemon zest.

Place the rolled oats, flour, salt and sugar in a separate bowl and blend the cold butter in.  I use a pastry cutter.  Sprinkle the topping over the apples.

Bake for 45 minutes or until the topping is brown and the apples are bubbling.

Serve hot, warm or at room temperature.  A dollop of ice cream on each serving wouldn’t hurt one bit!

Mom’s Apple Crisp

Makes: 6 servings

Bake Time: 45 minutes

Total Time: 1 hour

Ingredients

  • 1/2 tsp cinnamon
  • 1/2 cup water
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 6 apples, peeled and thinly sliced (I like Granny Smith, Honey Crisp or Cosmic Crisps)
  • 1/2 cup flour
  • 1/2 cup rolled oats
  • 1/4 tsp salt
  • 3/4 cup sugar (can mix brown & white sugars or use only one. I prefer brown sugar)
  • 1/2 cup unsalted butter, softened (or non-dairy butter such as Miyoko’s for a vegan version)

Instructions

Preheat the oven to 350°F.

Place apples in an 8- or 9-inch square baking pan. Combine cinnamon, water, lemon juice and zest in a measuring cup and pour over apples. Toss to coat the apples.

Place flour, rolled oats, salt and sugar in a medium mixing bowl. Cut in the softened butter, using a pastry cutter, until crumbly. Sprinkle topping over the apples.

Bake for 45 minutes or until the topping is browned and the apples are bubbling. Serve hot, warm or at room temperature. A scoop of ice cream on top makes a lovely dessert!
