Puff Pastry Fig Flatbread

When figs start appearing in the food markets, I’m always looking for wonderful recipes and this Puff Pastry Fig Flatbread is no exception.  It’s a simple appetizer that is completed in about 30 minutes.  Woohoo!

A puff pastry base is topped with sautéed onions, Parmesan cheese, mixed greens, and fresh figs.  Once baked, sprinkle the top with blue cheese and drizzle it with balsamic glaze.  It’s so easy and yet so delicious!

Begin by cooking the onions in olive oil over medium heat.  Once translucent, set aside.

Spread out the puff pastry into a rectangle.  It doesn’t have to be exact…this is a rustic flatbread.  Prick the dough all over with a fork.  This will help eliminate air pockets.

Spread the onion, Parmesan cheese, baby greens and figs over the dough and bake for 15 minutes or until the edges of the crust are golden.

Remove from the oven and sprinkle with blue cheese.  Drizzle the balsamic glaze over the flatbread and add extra baby greens, if desired.

Serve warm or at room temperature.

Puff Pastry Fig Flatbread

Makes: 8 servings

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients

  • 1 sheet puff pastry dough (defrosted according to package directions)
  • 1 tbsp extra-virgin olive oil
  • 1 small red onion, thinly sliced
  • 1/3 cup grated Parmesan cheese
  • 2 cups mixed baby greens, spinach, kale, arugula, etc., plus more for garnish
  • 6 fresh figs, stems trimmed and halved (quartered if large)
  • 1 tbsp balsamic vinegar glaze
  • 1/2 cup crumbled blue cheese

Instructions

Heat the oven to 400°F. Line a large rimmed baking sheet with parchment paper.

Heat the oil in a skillet over medium heat. Add the onion and cook until softened and translucent, stirring often, 10-12 minutes.

Place the pastry dough on the prepared baking sheet and unfold. Use your hands to flatten and smooth the dough into a casual rectangle (no need to be perfect). Prick the dough all over with a fork.

Distribute the onion, Parmesan cheese, 4 cups of the greens and the figs over the dough. Bake 15 minutes, or until the edges of the crust are golden.

Remove from the oven and immediately sprinkle the top with the blue cheese. Drizzle the balsamic glaze over the top. Garnish with fresh greens, if you like. Slice with a sharp knife or pizza cutter and serve warm or at room temperature.
