Sweet Potato Fries

Sweet potatoes seem like an Autumn ingredient, along with pumpkins and apples, and maple syrup, but I’m especially fond of them year-round.

I also think of sweet potatoes as the healthier alternative to red or Russet potatoes and when you prepare them as I do, they are VERY healthy!!

Sweet Potato Fries

This recipe is so easy (I know, I say that a lot…but this truly is!).  One ingredient (sweet potatoes), one step in the recipe (put in the oven) and you are done (besides eating, of course)!

So, go ahead:  EAT!!

Sweet Potato Fries

Makes: 2 servings

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutess

Ingredients

  • 2 sweet potatoes, cut into sticks, 1/4” square x length of potato
  • 2 tbsp olive oil
  • Kosher salt and fresh ground pepper, to taste
  • Flaky salt, for finishing (such as FalkSalt or Maldon)

Instructions

Preheat the oven to 425°F.

Place sweet potatoes on 2 large baking sheets and toss with olive oil, salt and pepper.  Transfer to the oven and cook for 15 minutes.  Flip the sweet potatoes and continue baking for another 15-20 minutes longer.  Remove from oven, sprinkle with flaky salt and serve!

Chef’s Note: 

If doubling, make sure to use extra sheet pans.  If you crowd them all onto one pan, they will steam vs bake and won’t be crispy.
