Watermelon Salad with Feta and Mint

Watermelon Salad with Feta and Mint…nothing says summer better than this simple salad.

It doesn’t take much to throw this salad together.  Whisk up a light lemony dressing to pour over watermelon balls or chunks, feta chunks, Kalamata olives and sweet onions.  Garnish with mint leaves and voilá, salad is served!

Seriously, it’s not much more than that!  Bonus:  it only takes ten minutes to make!
