5-Ingredient Tomato Soup

5-Ingredient Tomato Soup??  Really?  I’m here to say that it only takes 5 ingredients (3 of which you probably have in your pantry…garlic, salt and butter) to create this rich, creamy soup.  Its tomato flavor is pure.  It’s heaven in a bowl.  And on a chilly day, this will warm you to the soul!

There you have it:  San Marzano whole tomatoes, salted butter, yellow onions, smashed garlic and a little extra salt for good measure!  It’s modeled after chef Marcella Hazan’s tomato sauce recipe and can’t be beat!

These are delicious soups but when you are in the mood for minimal, simplistic cooking, this is it!

This is the simplest soup to make.  Place all of the ingredients into a large saucepan and let simmer for about 45 minutes, stirring every so often to prevent scorching on the bottom.

Remove the onion pieces and use an immersion blender to purée the soup.  You can make it as creamy or chunky as you prefer.  I like it thick and chunky.  You can also thin it out using milk, water or broth.

To serve, ladle into bowls and serve with grilled cheese (iconic), garlic bread or croutons.

Makes: 4 servings

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Ingredients

  • 2 (28-ounce) cans San Marzano tomatoes (whole or crushed will work – I usually use whole tomatoes and break apart with wooden spoon of my clean hands)
  • 1 stick (8 tbsp) salted butter
  • 1 yellow onion, peel removed and cut into 4 chunks
  • 3–4 cloves smashed garlic (optional)
  • 1 & 1/2 tsp salt

Instructions

Put the tomatoes, butter, garlic, salt and onion in a large saucepan or Dutch oven. Bring it up to a low bubble, then turn the heat to medium low. Cover partially with a lid; let it simmer for 45 minutes. Stir every 15 minutes or so to prevent scorching on the bottom.

Remove the onion pieces using tongs. I leave the garlic in there, but that’s up to you!

Using an immersion blender, blend up the soup until it’s a smooth as you want it. Taste and adjust; you can thin it out with milk, water, broth, cream, whatever you want; I just leave it as-is!

Serve tomato soup with garlic bread, grilled cheese, croutons, crackers, pesto, whatever you like!
