Blackberry Sparkling Mule

It doesn’t take much to make this Blackberry Sparkling Mule so there is no excuse to not make it!

It’s refreshing, simple, and the perfect hot-weather cocktail.  Muddled blackberries, mint and lime juice are combined with vodka and topped with ginger beer and champagne or sparkling wine.  It couldn’t be easier to make this refreshing cocktail!

Place the blackberries in a cocktail shaker along with the mint and lime juice.  Use a muddler to press the juices out of the blackberries and to release the flavor of the mint.

Add the vodka.  Fill the shaker with ice and shake, shake, shake!

Strain the mixture into champagne or cocktail glasses that are filled with ice.  Add the ginger beer and top it with champagne or sparkling wine.  Garnish with blackberries and mint.

Ingredients

  • 1/2 cup fresh or frozen blackberries
  • 16 leaves fresh mint, plus more for topping
  • juice from one whole lime
  • 3 ounces vodka
  • 4 ounces ginger beer, chilled
  • champagne or sparkling wine, chilled, for topping

Instructions

In a cocktail shaker or glass jar, muddle the blackberries, mint, and lime juice, squashing everything to release the juices. Add the vodka. Fill with ice and shake until combined.

Strain into a champagne or wine glass with ice. Add the ginger beer and top with the champagne. Garnish with mint. Drink and enjoy!
