Butternut Squash Prosciutto Pizza

The cooler weather we are all experiencing brings winter vegetables & herbs, such as butternut squash and sage. This recipe incorporates both in a wonderful new take on pizza. Fresh pizza dough gets topped with cider-caramelized onions, a combination of three different cheeses, salty prosciutto and Autumn-roasted butternut squash. Bake this in just 15 quick minutes and you have the perfect weeknight pizza or appetizer!
Let’s begin with the butternut squash…it is roasted with a combination of winter flavors: sage, cinnamon, cayenne and honey. While that’s roasting, the onions get caramelized in butter and apple cider to add to that homey flavor. Mozzarella, Fontina and blue cheese are combined to give a bit of creamy tanginess to the pizza. All-in-all, this one’s a winner!

Butternut Squash Prosciutto Pizza
Makes: 6 servings
Prep Time: 20 minutes
Bake Time: 30 minutes
Total Time: 50 minutes
Ingredients
- 1/2 pound pizza dough, at room temperature
- 2 tbsps extra-virgin olive oil
- 2 cups cubed butternut squash or pumpkin
- 2 tsp honey
- 2 tbsp chopped fresh sage
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper or to your taste
- 2 pinches crushed red pepper flakes
- Kosher salt and black pepper
- 2 tbsp unsalted butter
- 2 yellow onions, thinly sliced
- 3/4 cup apple cider
- 3/4 cup shredded whole milk mozzarella
- 3/4 cup shredded fontina cheese
- 1/4 cup crumbled blue cheese (optional)
- 2 ounces thinly sliced prosciutto, torn
Instructions
Position the oven rack in the upper 1/3 position. Preheat the oven to 425ยฐ F. If you have a baking stone, start preheating it.
Meanwhile, caramelize the onions. Melt the butter in a large skillet over medium-high heat. Add the onions and cook 3 minutes, until softened. Add half the apple cider, season with saltย and pepper and continue cooking another 5 minutes, until the cider has mostly evaporated. Add the remaining cider and cook another 5 minutes or until the onions are golden and caramelized. Add a pinch of crushed red pepper, cook another minute. Remove from the heat.
To assemble, remove the plastic wrap from the dough. Gently press the dough until it covers the entire sheet pan. Drizzle the dough lightly with olive oil. Top with the onions, you may not need them all. Add the cheese, then the prosciutto. Arrange the butternut squash on top.
Slide into the preheated 500ยฐ F oven and bake for 10 minutes, rotate the pizza, and bake another 3-5 minutes or until the crust is golden and the cheese has melted. Top the pizza additional crushed red pepper flakes.

This is the exactย Quarter Sheet Panย I use. You can use any sheet pan you have that’s of similar size; it does not need to be exact.
