Smoky Glazed Asparagus

Smoky Glazed Asparagus is a wonderful addition to any spring-time meal.  The smoky flavor is due to the grill but the mayonnaise-based glaze gives the asparagus a lovely blistered crust when it’s grilled.  This marinade is also wonderful on broccoli or endive.

Simply whisk the marinade ingredients together and toss with the asparagus.  Easy Peasy!

Let it stand for about 30 minutes.  Meanwhile, heat the grill to a high heat.

Grill the asparagus until it’s lightly charred and blistered in spots.  Depending on the thickness of the asparagus, this could take 3 minutes or 5-6 minutes.  Be sure to turn the asparagus often so it doesn’t burn.

Remove from the grill and serve with extra lemon on the side.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 garlic clove (crushed)
  • 1 tbsp sweet smoked paprika
  • 2 tsp kosher salt
  • 1 tsp cumin seeds
  • 1 pound thick asparagus (trimmed)

Instructions

Light a grill. In a shallow dish, whisk the mayonnaise with the oil, lemon juice, garlic, paprika, salt and cumin. Add the asparagus and toss; let stand for 30 minutes.

Grill the asparagus over moderately high heat, turning, until tender and blistered in spots, 6 minutes; serve.
